Skinny Passion Fruit Margarita
Ingredients:
- 4 oz tequila
- 4 oz passion fruit juice or frozen pulp – I use frozen Goya brand found in Latin American grocery stores
- 2 oz of each lemon and lime juice (freshly squeezed), with lemon and lime zest
- Spenda or Monkfruit sweetener to taste
- Tajin for rimming the glasses
- Sparkling water
- Ice
Instructions:
- Rim two glasses with Tajin. To do this, rub a lime wedge around the rim of the glass and then dip it into a small dish of Tajin.
- Fill a cocktail shaker with ice.
- Add the tequila, passion fruit juice/pulp, lemon and lime juice, and sweetener to the shaker or blender.
- Shake or blend the ingredients together until well combined and chilled.
- Fill the rimmed glasses with ice.
- Strain the margarita mixture into the glasses.
- Add sparkling water to the top and mix gently.
